Mediterranean Chicken & Quinoa Bowl with Tzatziki
Ingredients

  • 1 ½ cups full-fat Greek yogurt
  • 2 large garlic cloves, finely minced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white vinegar
  • ½ tsp salt
  • 1 tbsp chopped dill
  • subheading: Avocado Feta Salad:
  • 1 medium/large avocado, diced
  • ¼ cup feta
  • 1 ½ tbsp chopped dill
  • Juice of ½ lemon
  • Salt
  • subheading: Rest of Bowl:
  • 1 ½ cups cooked quinoa (about ¾ cup uncooked)
  • 1 large red bell pepper
  • ¼ cup pickled red onions
