Mediterranean Salad with Roasted Chickpeas
Ingredients

  • 4 to 5 cups salad greens (baby spinach, baby kale, Swiss chard, and/or Romaine are all great)
  • Roasted chickpeas
  • 1 cup grape tomato halves
  • 1 cup sliced cucumber
  • ½ to 1 cup kalamata olives (pitted)
  • ½ to 1 cup bottled artichoke hearts, drained
  • Vinaigrette or roasted garlic dressing for serving
