Prawn (Shrimp) and Lemon Pasta
Ingredients

  • ½ cup white wine (optional - sub with water)
  • ½ onion, roughly chopped

  • 400g / 13oz spaghetti
  • 3 tbsp extra virgin olive oil, plus extra for drizzling
  • 1 garlic clove, minced
  • 1½ punnets cherry tomatoes, cut in half (or 3 large tomatoes, diced)
  • 1 large lemon (or 1½ small lemons), zest and juice
  • 3 tbsp fresh parsley, finely chopped
  • 2 tsp dried chili flakes (optional)
  • Salt
  • Black pepper

  • Extra lemon wedges
  • Extra fresh parsley, finely chopped
