Instant Pot Easy Chicken Tacos

Servings: This will make 4 servings, 3 hard tacos each

Ingredients
  • 3 pounds of boneless, skinless chicken breasts
  •  
  • 2 packets of taco seasoning (I prefer lower sodium)
  •  
  • 1 and half cups of water
  •  
  • 1 (15 ounce) can cooked pinto beans, drained
  •  
  • 12 hard taco shells
  •  
  • taco veggies, cheese, salsa of choice
Steps
  1. Put the water in your instant pot
  2. add chicken breasts in it, not on trivet, but directly in liquid
  3. put two taco seasoning packets into the instant pot
  4. close and seal lid, set to 20 minutes on high pressure
  5. after cooking is done, allow to natural pressure release at least 10 minutes
  6. open lid, put drained pinto beans in. Set pot to saute for just a few minutes to warm beans
  7. turn off
  8. serve chicken on tacos with your favorite add-ins
Notes
  • can be modified for pulled chicken nachos too!
