Pork Tenderloin Sous Vide
Ingredients
  • subheading: Tenderloin:
  • 1 Pork Tenderloin
  • ½ tablespoon Salt
  • ½ tablespoon fresh ground Pepper
  • 1 to 2 teaspoons Smoked Paprika
  • 1 to 2 teaspoons Garlic Powder
  • 1 to 2 teaspoons Onion Powder
  • 1 to 2 teaspoons MSG/Accent (optional)
  • 1 to 2 tablespoons Extra Virgin Olive Oil
  • subheading: Sauce:
  • ⅛ cup Warm Water
  • 1 tablespoon tomato paste
Steps
  1. Place fresh tenderloin into sous vide safe sealable bag.
  2. Add seasonings to bag, making sure to have enough to cover the entire tenderloin.
  3. pour in 1 to 2 tablespoons of the olive oil, and massage bag so to spread oil and seasonings thoroughly.
  4. Place in sous vide bath at 140 degrees for 1 to 2 hours.
  5. Once done, pour the bag out into a hot pan, and sear the tenderloin on all sides.
  6. Turn off the heat, and remove the tenderloin, adding ⅛ cup of warm water and a tablespoon of tomato paste, stirring well to deglaze the pan. Scrape the pan, reduce the sauce and pour over the tenderloin. Serve over noodles or with rice.
