Instant Pot Salsa
When life gives you tomatoes...
Like any good Texan, I made salsa!!!

instant pot salsa!    

-8 c diced tomatoes (no need to blanch to remove skin)
-2 c diced onion
-2 c diced bell peppers
-2 c diced jalapeños (I did not remove the seeds but you do you)
-6-10 cloves of garlic, minced (I like garlic so I just eyeballed it)
-1 c apple cider vinegar
-2 T tomato paste
-Salt and pepper to taste

(To be added after cooking)
1/4 c lime juice (the juice of about 2 lime)
Cilantro (I used 2 bunches) chopped

Add tomatoes, onions, bell and jalapeño peppers, garlic, ACV, tomato paste, salt and pepper to instant pot. Set to manual high pressure for 20 min followed by QR.  Remove lid and sauté (still in the IP), stirring frequently till reaches desired thickness. Add cilantro and lime juice. Serve warm or chilled!

Makes about 8 cups. Recipe may be halved if desired.

Note: the final pic looks a bit distorted because of the steam!
