Episode 28 - Nachos & Tostadas
Ingredients
  • subheading: Mexican  "Meat" Marinade:
  • 1 Tablespoon - garlic powder
  • 1 T - onion powder
  • 2 T - ground Mexican red chili (any mild chili powder will do)
  • 1 T - paprika (I used a mix of sweet and smokey, you could also throw in some liquid smoke if you want)
  • 2 teaspoons - dried oregano
  • ½ t - black pepper
  • ½ t- ground cumin seed
  • ½ t - ground coriander seed
  • ¼ t - ground cinnamon
  • ¼ t - ground cloves
  • ¼ cup - apple cider vinegar
  • 1 to 2 T - tomato paste
  • 1 to 2 T - blended date paste (½ to ¾ cups water + 10 to 15 deglet dates, let soak, then blend until smooth)
  • lime, juiced
  • water to desired consistency, I probably used about ½ cup
  • subheading: Green Tomatillo Salsa:
  • 5 to 7 - tomatillos
  • ½ - red onion, chunked
  •  
  • roasted poblano
  • roasted japaleño
  •  
  • 1 handful - fresh cilantro
  • limes, squeezed
  • 3 to 5 - cloves garlic
  • subheading: Refried Beans:
  • 2 cans - no salt added black or pinto beans
  • 1 to 2 teaspoons - dried oregano
  • ½ to 1 teaspoon - garlic powder
  • ½ to 1 teaspoon - onion powder
  • ½ to 1 teaspoon - ground coriander
  • ½ to 1 teaspoon - ground dried red chili
  • lime, juice
  • roasted poblano pepper, diced...I forgot this during the show.
  • subheading: Mexican Nacho Cheese (does not really taste like cheese):
  • red or yellow onion
  • 3 to 4 - cloves garlic
  • 1 cup - nutritional yeast
  • ½ t - ground cumin
  • ½ t - dried oregano
  • ½ t - ground dried red chili
  • ½ t - paprika
  • ½ t - turmeric
  • roasted poblano pepper (and a habanero if you really want to go for it!)
  • steamed cauliflower and carrot to thicken (I normally use steamed potato)
  • ¼ to ½ cup - cashews (optional)
  • subheading: The Whole Works:
  • Tortillas (or a bed of greens!)
  • Marinated shredded jackfruit and ground soy curls
  • Refried beans
  • Nacho cheese
  • Sautéed hatch (any mild green) peppers and onions
  • Pico
  • Guac
  • Tomatillo salsa
  • Green cabbage or shredded lettuce
  • Sour cream
