Quick and Easy Vegetable Lo Mein
Ingredients
  • 8 oz lo mein noodles or regular spaghetti (dry)
  • subheading: For the Sauce:
  • 3 Tbsp soy sauce
  • 2 tsp sugar
  • ½ tsp ground ginger
  • ⅛ tsp ground white pepper (optional)
  • subheading: For the Veggies:
  • 1 Tbsp sesame oil
  • 1 carrot, sliced into match-sticks
  • 1 bell pepper, sliced thin
  • 8 oz mushrooms, sliced
  • 2 garlic cloves, minced
  • 3 c bok choy greens or your favorite dark, leafy green (spinach, chard, kale, etc) chopped
