  • 14 ounces andouille sausage
  • ¼ cup plus 1 tablespoon neutral cooking oil, such as canola or vegetable, divided
  • 6 cups (48 ounces) low-sodium chicken broth, at room temperature
  • 2 teaspoons filé powder (optional, see notes below)
  • 4 tablespoons (½ stick) unsalted butter
  • ½ cup all-purpose flour
