Sweet Potato Corn Chowder (vegan) (oil-free) (gluten-free
Ingredients
  • 4 cups fresh or frozen corn kernels
  • 4 cups peeled and cubed sweet potato
  • 5 cups water
  • 4 tbs brown rice flour
  • 2 tbs apple cider vinegar
  • 1 tsp thyme
  • ½ tsp black pepper
  • 1 tsp liquid smoke (optional)
  • salt to taste
Steps
  1. Place corn, sweet potato, 4 cups of the water, thyme, black pepper, vinegar and liquid smoke in Instant pot
  2. Mix brown rice flour with one cup of water until smooth
  3. Add the flour mixture to the pot
  4. Cook on "soup" setting (40 minutes), natural release
  5. Remove lid and stir well
  6. Place 2 cups of the soup in a blender and blend until smooth
  7. Add the blended soup back to the pot
  8. If it's still not thick enough, stir in 1 to 2 more tbs of brown rice flour and cook on low a few minutes longer, until it thickens
  9. Salt to taste and serve
