LEMON PAPRIKA GARLIC SHRIMP and DAIRY FREE SPINACH AND RICOTTA LASAGNA ROLL UPS with SPINACH WALNUT PESTO
Ingredients
  • Deets: @traderjoes wild shrimp seasoned with paprika, salt and garlic powder then sautéed in coconut oil and coconut aminos. After I cooked the shrimp I tossed them in a little lemon juice and olive oil. ROLL UPS: boil 4 @eatbanza lasagna noodles for about 6 minutes. Then spread a mixture of ½ cup of dairy free ricotta (I used @kitehillfoods), ½ teaspoon lemon juice, ¼ teaspoon salt, dash of pepper mixed with some sautéed spinach. Then roll them up. Brushed with spinach walnut pesto. Served with some @lef_farms greens and lemon juice and Parmesan cheese. •
