Chocolate Coffee Caramel Cake
Ingredients

  • 270 g unsalted butter (at room temperature)
  • 250 g caster sugar
  • 250 g all-purpose flour

  • ½ tsp baking soda
  • 4 eggs
  • ¼ tsp salt
  • 1 tbsp vanilla extract
  • 1 to 2 tbsp strongly brewed coffee (room temperature)
  • 2 tbsp caramel sauce (home made or store bought)
  • 50 g dark chocolate (55 to 65% cocoa) (melted and cooled to room temperature)
  • subheading: Frosting:
  • 240 ml milk (I used full fat)
  • 80 g caster sugar
  • 40 g all-purpose flour
  • 200 g full fat cream cheese
  • 150 g unsalted butter (at room temperature)
  • a pinch salt
  • ½ tsp vanilla extract
  • 20 g dark chocolate (55 to 65% cocoa) (melted and cooled to room temperature)
  •  
  • 60 ml caramel sauce (to layer between the cake)
