Brunch Egg Casserole
A wonderful casserole for weekend company or brunches --- john sent me a picture of this recipe

Ingredients
  • 6 slices white bread, crust removed
  • 1 pound ground sausage
  • 4 cups shredded monterey jack cheese
  • 6 eggs
  • 1 tsp salt
  • 1 tsp dry mustard
  • 2 cups half and half
  • 2 finely chopped onions
  • 1 tsp cumin
  • 1 tsp dry mustard
  • 1 jalapeno
  • 2 green chiles
Steps
  1. Lightly butter each slice of bread.
  2. Place bread in 9 by 13 inch buttered glass baking dish.
  3. Brown sausage with finely chopped onions and chopped jalapeno and green chiles. Sprinkle mixture over bread. Sprinkle with grated cheese.
  4. Beat eggs. Add salt, cumin, mustard, and half and half to eggs. mix well. Pour egg mixture over bread, sausage and cheese.
  5. Cover with foil and refrigerate overnight. (Then can be frozen until ready to use).
  6. Remove foil, bake for 45min at 350 until casserole is bubbly and lightly browned on top. This dish reheats easily.
Notes

  • Note that it should be refrigerated overnight (can be frozen before oven step)
  • Perhaps try with fennel next time.
