Ingredients
  • ¾ cup almond flour
  • ⅓ cup flaxseed meal finely ground*
  • 2 tablespoons psyllium husk finely ground*
  • 1 tablespoon poppy seeds
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 3 tablespoons grass-fed butter or coconut oil/ghee, at room temp
  • ⅓ to ½ cup erythritol xylitol, or coconut sugar if paleo, to taste (we use ⅓ cup)
  • zest one lemon
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon vanilla extract
  • 2 eggs
  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons sour cream or coconut cream + ½ tsp apple cider vinegar
  • subheading: FOR THE LEMON GLAZE:
  • 3 tablespoons powdered sweetener
  • ½ teaspoon lemon zest
  • 1 to 3 teaspoons lemon juice as needed
