Persian Dill and Lima Bean Rice
Ingredients
  • 3 cups white basmati rice
  • 1 bag (12 oz.) frozen baby green lima beans or fresh young fava beans, shelled and steamed till tender
  • 2 tsp salt
  • ½ tsp saffron threads
  • ¾ cup vegetable oil (I use grapeseed)
  • 1 cup fresh chopped dill, or more to taste
