Cajun Sausage and potatoes casserole

Ingredients
  • 1 lb smoked sausage or kielbasa
  • 2 medium to large potatoes or 1 to 2 lb fingerling potatoes, cut into 1 in cubes
  • 1 15 oz can of green beans or small bag of steamed green beans
  • ½ cup sliced onions
  • 3 cloves of garlic, minced
  • 3 T olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Slap Ya Momma or Cajun seasoning

  • ½ cup sliced green pepper
  • ¼ to ½ tsp red pepper
Steps
  1. Turn on oven at 400 degrees. Spray a 9 x 13 pan with cooking spray. If green beans are in a steam bag, cook them in the microwave according to directions. Slice sausage and lay slices on the bottom of the pan.
  2. Put frying pan over medium heat and add 1 T of olive oil. Add sliced onions and minced garlic (and optional green peppers if you want them). Cook for a few minutes until onions (and peppers) start to get soft. Add to the pan on top of the sausage.
  3. Put cut up potatoes and green beans into a bowl, add 2 T of olive oil, salt, black pepper, garlic powder, and Cajun seasoning (this is where to add the optional red pepper). Mix together and add on top of the sausage and onions. Cover with foil and cook for 45 minutes or until potatoes are soft.
