Homemade Pasta
With kitchenaid stand mixer and pasta roller/cutter attachments

Servings: Makes approximately 1 ½ cups

Ingredients
  • 1 cup unbleached flour
  • 1 egg
  • ½ tsp salt
  • 2 tbsp water
Steps
  1. Place paddle attachment on mixer.
  2. Mix flour and salt in mixer bowl. Lock bowl into place on mixer and turn speed to 2.
  3. Beat egg and water in a small bowl and gradually add to flour.
  4. Mix for one minute and turn mixer off.
  5. Remove paddle and add dough hook.
  6. Turn on to speed 2 and mix for 2 to 3 minutes.
  7. Form dough into a ball and place on lightly floured parchment paper.
  8. Flatten dough with heel of hand then cut into 4 pieces.
  9. Add pasta roller attachment to mixer and turn mixer to speed 2.
  10. Starting on level 1, run one of the pieces through the roller, 2 times. Move to level 2 and run through 2 more times. Do this again for levels 3 & 4.
  11. Repeat the process for the other 3 pieces, laying your rolled pasta sheets on a lightly floured surface.
  12. Remove roller attachment.
  13. Start you water boiling;
  14. fill a medium pot half full of water, to boiling, with ¼ tsp salt and ½ tsp olive oil
  15. Attach the pasta cutter to the mixer, turn on to speed 2 and run each pasta. sheet through and dust with flour.
  16. Add the pasta to the boiling water and cook for 3 minutes.
  17. Strain and serve with your favorite toppings
