Mary Berry's Orange Tea Bread
Ingredients
  • measuring cup Servings: 10 to 12  (makes one 8-inch round loaf)
  • 1 cup (150 grams) dried currants
  • ¾ cup (150 grams) packed light brown sugar
  • ½ cup (75 grams) golden raisins
  • ½ cup (75 grams) diced candied orange peel (may substitute additional golden raisins)
  • Finely grated zest of 2 navel or blood oranges (1 tablespoon)
  • 1 ¼ cups hot black tea (brewed)
  • Neutral oil, softened unsalted butter or nonstick cooking spray, for greasing the pan
  • 2 ¼ cups (280 grams) all-purpose flour
  • 1 tablespoon baking powder
  • 1 large egg, beaten
