Youvetsi (Greek Chicken and Orzo Stew)
Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons canola oil
  • 2 tablespoons minced garlic
  • 1 cup orzo, preferably Greek (kritharaki)
  • 2 tablespoons tomato paste
  • 2½ cups chicken stock, homemade or store-bought
  • ½ teaspoon kosher salt, plus more to taste
  • 1½ cups Spiced Tomato Sauce (recipe above)
  • ½ teaspoon dried oregano, plus more for garnish
  • ¼ teaspoonground allspice
  • ¼ teaspoonground cinnamon
  • ¼ teaspoonAleppo pepper
  • 1 cupgrated Kefalo graviera cheese, plus more for garnish
  • 1 tablespoon minced chives
  • extra-virgin olive oil, for drizzling
