Khayle (Azerbaijan "frittata over rice" recipe)
KHAYLE or Gayle (accent on the last syllable) is a delicate vegetarian dish of Mountain Jew cuisine, made of herbs, onion and eggs on rice.

Ingredients
  • subheading: for khayle:
  • 1 large onion
  • 1 bunch spinach (170g/6oz baby spinach)
  • 1 bunch green onions
  • 1 bunch cilantro
  • 1 bunch dill
  • 1 bunch parsley
  • 5 to 6 large eggs
  • 2 tbsp clarified butter or olive oil
  • Salt and pepper to taste
  • subheading: for Osh:
  • 2 cups long-grain Basmati rice (cup size 250 ml)
  • 3 quarts (3 liter) water
  • 3 tbsp salt
