Zucchini Patties with Quinoa
Ingredients

  • 1 cup cooked quinoa
  • ¾ cup Panko breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • ½ teaspoon red pepper flakes
  • Handful fresh  flat-leaf parsley (chopped finely)
  • Sea salt (to taste)
  • Ground black pepper (to taste)
  • 3 tablespoons olive oil (more as needed)
