Sweet Potato and Black-Eyed Pea Soup
Ingredients
  • 1 cup dried black-eyed peas, soaked for at least 3 and up to 12 hours
  • ¼ cup vegetable oil
  • 3 small tomatoes (12 ounces total), cored and chopped
  • 1 large yellow onion (12 ounces), chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, chopped
  • ½ teaspoon cayenne pepper
  • ½ teaspoon fine salt, plus more to taste
  • 1 tablespoon white wine vinegar (may substitute apple cider vinegar)
  • 3 large sweet potatoes (2 to 2 ½ pounds total), peeled and cut into ½-inch dice
  • 2 cups water
  • 3 tablespoons palm oil or coconut oil
