Sweet Potato Breakfast Cookies
  • 3 cups old-fashioned rolled oats
  • 1 cup almond flour
  • 1 tbsp grated fresh ginger or 1 tsp ground
  • 2 tsp ground cinnamon
  • ½ tsp baking powder
  • ½ tsp fine sea salt
  • 1 cup orange-fleshed sweet potato puree (see note)
  • ½ cup grade B maple syrup
  • ½ cup coconut oil, melted
  • 1 tsp vanilla extract
  • ½ cup raisins
