Eastern Shore Oyster Stuffing
Ingredients
  • ½ lb bacon, cut into ½” thick slices
  • ½ lb sausage
  • 1 onion, diced
  • 4 celery ribs, diced
  • 2 carrots, diced
  • 3 cloves of garlic, minced
  • 2 tsp poultry seasoning
  • salt & pepper to taste
  • 1 bunch Italian parsley, chopped
  • 2 c. spinach (or kale), chopped
  • 1 qt. chicken stock
  • ½ c. white wine
  • 2 loaves French bread, torn apart into small pieces
  • 2 pints shucked oysters, drained (reserve liquid)
