  • 1 tablespoon finely grated peeled fresh ginger
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • ½ teaspoon ground turmeric
  • ½ cup unsweetened coconut milk
  • ⅓ cup chopped cilantro, plus small sprigs for assembling

  • 3 large eggs

  • 2 cups finely shredded green cabbage
