Arugula, Fennel, Garbanzo and Shrimp Salad
Ingredients
  • 1 pound of shrimp, cooked as you like (see note above)
  • 1 teaspoon honey
  • 2 teaspoons fresh lemon juice
  • 1 tablespoon orange juice
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 small fennel bulb, thinly sliced with a mandolin
  • 4 cups baby arugula (rocket), washed and dried
  • 1 orange, peeled and cut into segments
  • ½ small red onion, thinly sliced
  • 1 cup cooked and drained  Rancho Gordo Garbanzo beans or white beans, such as Alubia Blanca or Marcella
