  • 3 sprigs of fresh thyme
  • 2 sprigs fresh rosemary
  • 1 dried bay leaf
  • 1 ½ lbs Russet potatoes
  • 2 large carrots
  • salt & pepper to taste
  • garnish with chopped fresh parsley
  • 6-quart Dutch oven pot
