Instant Pot Teriyaki Chicken {21 Day Fix}

Ingredients
  • subheading: Teriyaki Sauce:
  • 6 Tbs low sodium soy sauce (or gluten-free tamari if you're GF!)
  • ¼ cup pure maple syrup
  • 1 Tbs sesame oil
  • 1 Tbs rice vinegar
  • 2 Tbs grated fresh ginger (can sub ground ginger, but the fresh is the bomb!)
  • ½ Tbs minced garlic (again can sub garlic powder)
  • ½ tsp chile garlic paste (this is the amount that I use that my kids will eat, if I'm meal prepping this for lunches just for myself, I use at least 1 tsp - gimme some heat!)
  • 2 tsp cornstarch
  • subheading: Remaining Ingredients:
  • 1 ½ lbs boneless, skinless chicken thighs, well trimmed
  • 1 cup canned pineapple (packed in 100% juice), drained
  • subheading: Optional Brown Rice:
  • 2 cups long grain brown rice
  • 2 ¼ cups water
  • subheading: Optional Veggie Side Dish:
  • 6 cups of whatever veggies you like - I like to use broccoli, red bell peppers, green onions and some water chestnuts!
  • ½ cup water
