Roasted Baby Parmesan Potatoes
These Roasted Parmesan Potatoes are super crispy on the outside, soft and fluffy on the inside. They’re super versatile, ridiculously easy to put together, and are sure to be your all-time favorite.

Ingredients
  • subheading: For the Potatoes:
  • 1 lb baby gold potatoes
  • 3 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp garlic powder
  • 2 tbsp freshly chopped dill
  •  
  • subheading: Garlic Parmesan Butter:
  • 4 tbsp salted butter (half a stick), melted
  • 3 garlic cloves, minced
  • ¼ tsp pepper
  • ¼ tsp garlic powder
  • ¼ cup grated Parmesan cheese
Steps
  1. Wash and dry your potatoes.
  2. Slice the potatoes in half.
  3. Using a small paring knife, make diagonal slits (don't cut too deep, just score the potatoes) to make a diamond pattern.
  4. Into a bowl, add in the potatoes, olive oil, salt, pepper, garlic powder, and fresh dill. Mix to fully coat the potatoes.
  5. Into a small bowl, add the melted butter, garlic powder, pepper, and Parmesan cheese. Mix until it forms a paste-like mixture.
  6. Preheat the oven to 375°F.
  7. Line a baking sheet with foil, and add the melted butter paste to the bottom. Spread evenly.
  8. Lay in your seasoned potatoes, face down, in a single layer.
  9. Cook for 40 minutes at 375°F.
  10. Allow to cool for 5 minutes, then sprinkle extra cheese on top and serve.
Notes
  • Remember to turn the potatoes halfway through the cooking time to ensure that they're evenly cooked.
  • Can I Use Any Other Kind of Potatoes?
  • You totally can! We’ve used baby gold potatoes for this recipe, but you can totally make do with Russet and Fingerling potatoes too.
  • What Else Can I Add to the Potatoes?
  • To add some more flavor and deliciousness to these classic Parmesan potatoes, you can add some Italian seasoning into the butter mixture.
  • How Do I Use the Leftover Parmesan Potatoes?
  • If you’re not too fond of the texture of leftover Parmesan potatoes, and still don’t want to throw them away, you can add them to your breakfast casserole or omelet, or use them as a filling in your wraps.
