Steamed Gingerbread Pudding (Vegan)
Ingredients

  • 60 g (2 oz) crystallised (candied) ginger or stem ginger roughly chopped
  • 80 g (4 Tablespoons) golden syrup
  • subheading: Batter:
  • 250 g (2 cups) plain (all-purpose) flour
  • 2 ½ teaspoons baking powder
  • 3 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon mixed spice (or pumpkin/apple pie spice)
  • ¼ teaspoon salt
  • 120 g (½ cup) vegan block butter cold and diced
  • 100 g (packed ½ cup) light brown soft sugar
  • 120 ml (½ cup) unsweetened non-dairy milk (I use soy)
  • 80 g (4 Tablespoons) black treacle or molasses
