One-Pan Ground Beef and Rice
Ingredients
  • 2 teaspoons olive oil
  • 1 pound lean ground beef
  • 1 small yellow onion, peeled and diced
  • 4 cloves garlic, minced
  • 1 cup white basmati rice, rinsed and drained
  • 1 cup canned black beans, rinsed and drained
  • 1 cup canned corn kernels
  • 1 cup chunky salsa
  • 1 tablespoon butter
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cayenne pepper
  • ¾ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 cups beef broth, I used a reduced sodium variety
  • Chopped grape or cherry tomatoes, garnish to taste
  • Chopped green onion, garnish to taste
