Ingredients
  • 2 (14.5-oz.) cans fire roasted diced tomatoes - use Muir Glen for best quality
  • 1 small onion (140g) diced
  • 1 bell pepper (160g) diced
  • 2 Tbsp butter (28g)
  • ½ tsp salt or to taste
  • ½ tsp garlic powder or to taste
  • 2 cups chicken broth (480g)
  • 1 cup uncooked rice (180g) I used brown jasmine
  • 12 oz. seasoned shredded chicken (360g) store bought or homemade* see notes
