  • 3 small potatoes peeled and cut into 1-inch cubes
  • 1 tsp salt
  • 1 tbsp sugar
  • ⅛ tsp each: ground cinnamon, coriander, anise optional, it adds more flavor
  • ¼ cup chopped fresh cilantro
  • ½ onion finely sliced
