Ingredients
- 600g Pork Mince
- 1 large onion diced
- 5cm piece og ginger finely sliced
- 3 carrots cut into matchsticks
- Handful of green beans trummed and cut in half
- ⅓ cabbage finely sliced
- Some green leaves like kale /spinach
- Red capsicum finely sliced
- 500 gram pack of rice vermicelli noodles
- 2 tablespoons chinese five spice (or more to taste)
- Soya sauce to taste
- Fish sauce to taste
- Fried shallots to garnish
- Finely chopped vietnamese mint or coriander or basil or spring onions chopped to garnish
Steps
- Prepare noodles by soaking in water until softened (about 30 mins).
- Fry onion and ginger in olive oil until softened.
- Add mince and fry for 5 mins, unclumping mince as you go.
- Add 5 spice powder and fry for 5 mins.
- Add carrot and cabbage and fry until softened a little.
- Add vermicelli noodles, beans and leafy greens.
- Add soya sauce and fish sauce to desired taste.
- Add red capsicum. Serve garnished with dried shallots and herbs.
