Fried Vermicelli Noodles and Pork
Ingredients
  • 600g Pork Mince
  • 1 large onion diced
  • 5cm piece og ginger finely sliced
  • 3 carrots cut into matchsticks
  • Handful of green beans trummed and cut in half
  • ⅓ cabbage finely sliced
  • Some green leaves like kale /spinach
  • Red capsicum finely sliced
  • 500 gram pack of rice vermicelli noodles
  • 2 tablespoons chinese five spice (or more to taste)
  • Soya sauce to taste
  • Fish sauce to taste
  • Fried shallots to garnish
  • Finely chopped vietnamese mint or coriander or basil or spring onions chopped to garnish
Steps
  1. Prepare noodles by soaking in water until softened (about 30 mins).
  2. Fry onion and ginger in olive oil until softened.
  3. Add mince and fry for 5 mins, unclumping mince as you go.
  4. Add 5 spice powder and fry for 5 mins.
  5. Add carrot and cabbage and fry until softened a little.
  6. Add vermicelli noodles, beans and leafy greens.
  7. Add soya sauce and fish sauce to desired taste.
  8. Add red capsicum. Serve garnished with dried shallots and herbs.
