Baked Eggs
Ingredients
  • 2 Eggs
  • 3 Green Onions
  • ¼ tsp minced garlic
  • 1tbsp olive oil
  • Pickled jalapeno
  • Roma Tomato
  • 5oz Baby Spinach
  • Grated Fontina Cheese
  • Salt & Pepper to taste
  • ¼ tsp Italian Seasoning
  • Splash of heavy whipping cream
  • Chopped parsley
Steps
  1. Preheat oven to 375 degrees
  2. Sauté the white section of 3 green onions, minced garlic, a few slices of pickled jalapeño.
  3. Add 2 diced Roma tomatoes to olive oil with salt, pepper, and Italian seasoning.
  4. Add 5 ounces of baby spinach to the skillet and cover to wilt.
  5. Once the spinach has wilted, stir everything together, place freshly grated fontina cheese in the bottom of a small shallow Pyrex dish and top with the sautéed mixture.
  6. Make 2 small indentations with the back of a spoon and carefully crack the eggs in the indentions and season with salt and pepper.
  7. Add a splash of heavy whipping cream down both sides of the dish and place in your preheated oven.
  8. Cook until the whites were set and the yolks were runny (it took 16 minutes in my oven).
  9. Top with some of the green portion of the green onions and fresh chopped parsley.
