Keto Veg - Greek Salad
Ingredients without all specific amounts

Ingredients
  • 1 English cucumber
  • 2 Roma tomatoes
  • 6 stalks Green Spring onions
  • Feta Cheese
  • Virgin Olive Oil
  • Apple Cider Vinegar
  • Salt
  • Pepper
Steps
  1. Cut cucumber in half lengthwise
  2. Use a spoon to remove the seeds.
  3. Cut in in half lengthwise again and slice or dice.
  4. Cut tomatoes in half and remove the seeds.
  5. Cut the tomato shells into thick strips and dice.
  6. Finely chop green Spring onions
  7. Mix, drizzle with olive oil and a lesser amount of Apple Cider Vinegar
  8. Add feta cheese
  9. Salt and Pepper to taste
Notes
  • Green Spring onions have about half the sugar of red onions (4 carbs per cup, 1.2 fiber).
  • Ounce for ounce, red onion has slightly less calories than white (37 vs 42) and slightly more fiber (2 grams vs 1.2 grams)
