Cornbread PERFECT! Honestly, I used Jiffy corn muffin mix in the box! . Better than oven baked! The steam must have helped keep it more together because in the oven it often comes out crumbly. YAY!:

Cornbread PERFECT! Honestly, I used Jiffy corn muffin mix in the box! Cooked in 6" springform pan on manual high pressure 10 mins, then natural pressure release on keep warm for 10 mins. I placed the spingform pan on the rack that came with the instant pot with about a cup of water under. Let out the rest of the pressure and it is perfect. Better than oven baked!
