Family-Friendly Nachos
Ingredients
  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 1lb lean beef mince
  • 1 can chopped tomatoes
  • 1 can black beans, drained (not rinsed)
  • 2 tbsp Vegemite (sprinkle some nutritional yeast instead)
  • 2 tbsp tomato paste
  • ⅓ cup water
  • 7oz unsalted or low sodium corn chips
  • 1 cup grated cheese
  • subheading: Serve with:
  • sour cream
  • coriander leaves, roughly chopped

  • 2 ripe avocados, halved
  • 1 tbsp lemon juice
  • 2 ripe tomatoes, finely chopped
  • salt and pepper
