  • 1 medium red onion, finely diced
  • 2 plum tomatoes-halved, seeded and finely diced
  • 1 cup chicken stock or low-sodium broth
  • ½ cup freshly grated Parmesan cheese, plus shavings for garnish
  • 2 tablespoons minced cilantro
  • Kosher salt
