Ingredients
- 3 Tablespoons roughly chopped red onion
- 1 Tablespoon plus 1 teaspoon extra-virgin olive oil
- 1 ½ Tablespoons apple cider vinegar
- ½ teaspoon Kosher salt
- 1 cup chopped tomato
- ⅛ teaspoon garlic powder
- ⅛ teaspoon dried oregano
- 1 cucumber, peeled and cut into 1-inch pieces (about 1.5 cups)
- 1 medium (4 ounce) Haas avocado, chopped
- 3 cups chopped Romaine lettuce
Steps
- In a large bowl, combine the red onion with 1 Tablespoon of the olive oil, 1 Tablespoon of the vinegar, ¼ teaspoon salt, and black pepper to taste. Let sit until the onion flavor mellowe, about 5 minutes.
- Add the tomato, garlic powder, oregano, the remaining salt, and a pinch of pepper, and let sit for at least another 5 minutes. Add the cucumber and toss.
- When ready to serve, toss in the avocado and lettuce, the remaining 1 teaspoon olive oil and the remaining ½ Tablespoon vinegar.
