Ingredients

  • 500 g ground pork
  • 700 g shrimp ( chopped )
  • 1 medium size Spanish Mackerel, minced the meat
  • 1 ½ cup chopped carrot ( definitely optional, I like to add carrot in my siu mai so my girl ate some veggie too)
  • About ¾ cup scallion chopped very finely
  • 2 whole egg
  • 1 big clove of garlic chopped very finely
  • 6 small shallots chopped very finely
  • 1tsp grated ginger
  • 2 Tbsp all purpose flour
  • 3 Tbsp tapioca starch
  • 2 Tbsp sesame oil
  • Some salt and pepper to taste
  • About 1 tsp knor chicken stock  (powder)

  • Just mix everything together. Kinda kneed it like a bread dough for few minutes. Till all mix nicely. To taste...i boil water in the saucepan and take a small amount about 1 tsp of the mixture to taste see if you need to add salt or pepper.  If everything taste okay then get he dumpling wrapper and wrap it.
  • I steam for 20 min.
