West African Chicken Stew (Paleo & Whole30)
Ingredients
  • 2 teaspoons coconut oil (or other cooking fat)
  • 1 pound boneless, skinless chicken thighs
  • ¾ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ medium onion, diced (about ½ cup)
  • 1-inch piece fresh ginger, grated (about 1 tablespoon)
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1 ½ teaspoons ground coriander
  • ½ teaspoon cayenne pepper
  • 1 bay leaf
  • 1 cup canned crushed tomatoes
  • ¼ cup water
  • ¼ cup sunflower seed or almond butter (sugar-free for Whole30)
  • ¼ teaspoon vanilla extract
