Broccoli and Scallion Frittata
Ingredients
  • 2 cups broccoli florets (from 1 large or 2 small heads)
  • ½ cup low-sodium chicken stock
  • 4 large eggs*
  • ⅛ teaspoon kosher salt
  • freshly ground pepper
  • 1 ounce Parmesan cheese, grated
  • ½ tablespoon olive oil
  • 4 scallions, whites only, thinly sliced (thinly slice and reserve the greens for today’s lunch)
