  • 2.5 to 3 tbsp ( 36.97 ml) oil or melted vegan butter

  • 1 cup ( 245 g) pumpkin puree not pumpkin pie mix
  • ⅓ cup ( 43 g) cashews , soaked in hot water for at least 20 minutes.
  • ¼ cup ( 59.15 ml) maple syrup
  • 2 tsp cornstarch or tapioca starch
  • ⅛ tsp salt
  • ½ tsp vanilla extract
  • 1 tsp pumpkin pie spice
