Ingredients
  • 1 cup brown rice
  • 1 med zucchini, finely chopped (about 1 cup)

  • 1 cup fresh cilantro leaves, chopped
  • 3 to 4 tbsp fresh lemon juice
  • ¼ tsp freshly ground black pepper
  • sea salt, to taste
