Ingredients
  • 2 lbs. baby new potatoes, cut into ½-in.-thick slices (about 6 cups)
  • 1 Tbsp. extra-virgin olive oil
  • 1 tsp. cumin seeds
  • 1 tsp. brown or black mustard seeds
  • ½ Tbsp. grated fresh ginger (from 1 [2-in.] piece)
  • ½ to 1 tsp. chopped fresh hot Indian or Thai green chile (from 2 chiles)
  • 1 tsp. garam masala
  • 1 tsp. ground coriander
  • 1 tsp. ground cumin
  • ½ tsp. ground turmeric
  • 1 cup canned crushed tomatoes (from 1 [15.5-oz.] can)
  • ½ tsp. kosher salt
  • ¼ cup chopped fresh cilantro leaves
