Ingredients
  • subheading: For the dressing:
  • ¼ cup lime juice freshly squeezed
  • 2 tbsp tamari or soy sauce
  • 1 tbsp soft brown sugar or other sweetener of your choice
  • 2 tsp sesame oil
  • 1 clove garlic crushed or finely grated
  • 1 tbsp ginger finely grated
  • subheading: For the salad:
  • Half a pack of thin rice stick noodles (approximately 180g)
  • 4 to 5 thick slices of fresh pineapple skin trimmed
  • 1 telegraph cucumber
  • 1 carrot
  • 1 cup coriander approximate, roughly choppped, cilantro
  • ½ cup mint approximate, roughly chopped
  • ½ cup roasted peanuts finely chopped
  • 2 to 3 green chillis finely chopped
  • 1 tbsp sesame seeds (I used a mixture of black and white)
