Dry Brined Spatchcock Turkey
Ingredients

  • 1 teaspoon ground white pepper
  • 2 teaspoons rubbed sage
  • 2 teaspoons ground marjoram
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger

  • 12 to 14 lb fresh or heritage turkey spatchcocked (see above)
  • Dry Brine recipe above
  • 4 oz 1 stick salted butter, at room temperature
  • 1 onion chopped
  • 3 large carrots chopped
  • 4 celery ribs chopped
  • 2 fresh bay leaves
  • 1 bunch fresh sage
  • 1 bunch fresh thyme
  • 2 sprigs of fresh rosemary
  • subheading: Gravy:
  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Turkey Drippings
  • 3 cups turkey stock see above for instructions, warmed
  • Kosher Salt
  • Freshly ground black pepper
