Peaches-And-Cream Icebox Pies

I'm a fan of Chef Lidia Bastianich. Her recipes are simple foods rooted in her childhood,when families meals used the fresh vegetables and meat grown in small kitchen gardens or backyard chicken coops. Julia Child,is a goddess of the kitchen and I vow to someday cook her iconic Boeuf Bourguignon.

12 jumbo foil and 12 jumbo paper muffin liners

24 shortbread cookies (such as Lorna Doone)

⅓ cup pecans

3 Tbsp. unsalted butter, melted

½ tsp. ground cinnamon

1 ½ cups heavy whipping cream

3 ( 8-oz.) pkg. cream cheese, softened

½ cup granulated sugar

1 ½ tsp. grated lemon zest

¼ tsp. kosher salt

1 medium peach, peeled and chopped (about ¾ cup)

2 medium peaches, sliced (about 2 cups)
