  • 4 cupswhole milk
  • ½ cupDemerara sugar, or to taste
  • 1 vanilla bean, split and seeds scraped (or 1 teaspoon vanilla extract)
  • 1 fresh bay leaf
  • 1 large stickcinnamon
  • ⅛ teaspoonfreshly grated nutmeg
  • 1 cupgrated cocoa stick (or ¼ cup unsweetened cocoa powder)
  • ⅛ teaspoonkosher salt

  • ¾ cuplukewarm water
  • ½ cupgranulated sugar
  • 1¼ teaspoonactive dry yeast
  • ½ cupwhole milk
  • 1 egg
  • 1 teaspoonsalt
  • 3¾ cupsbread flour, plus more for dusting
  • 5 tablespoonsbutter
  • canola oil, for frying
  • powdered sugar, for dusting
